Pandan Red Bean Steamed Cake 香兰红豆外郎糕

A mildly sweet and light confectionary made with sweetened red beans added to the pandan layer sits on top of the milk layer. This cake has a slightly springy texture.

Yield: one 14cm round cake

Sweetened Red Bean
50g red bean 红豆
100g water 水
65g raw sugar 黄沙糖

1. Rinse red bean and soak in 100g water for at least 6 hours.

2. Pour 200ml of water into the rice cooker pot. Pour the soaked beans and water from (1) into a heat resistant ware, and place into the rice cooker pot.

3. Start cooking the red beans using the "Quick Cook" function for two rounds. After the first round of cooking, pour in another 200ml of water to the rice cooker pot, and start the second round of cooking till the beans become soft.

4. Drain away the liquid from the cooked red bean. And mix the red beans with 65g of raw sugar.




5. Pour 100ml of water to the rice cooker pot, and  Start the "Quick Cook" function again.

6. Allow the red beans to cool down before use.

Pandan Cake Layer
135g water 水
6g pandan leaves 香兰叶
50g top flour 低筋面粉
30g fine sugar 细糖
40g sweetened red beans 蜜红豆

1. Grind pandan leaves and water using a powerful food processor.
2. Sift top flour into a mixing bowl and mix well with sugar. Pour the pandan mixture to a mixing bowl and blend well.


3. Pour the mixture through a sieve to filter out the small lumps.

4. Add in the red beans and pour into a heat-resistant bake ware. And cover with heat-resistant food wrap.



5. Steam the batter in high heat for about 15 minutes, or until an inserted stick came out clean.


For Philips Avance Rice Cooker, pour in 300ml water into the pot, place the cake batter over a steamer stand, select "Steam" function, and set "cooking time" as 15 minutes.

Milk Cake Layer
50g top flour 低筋面粉
30g fine sugar 细糖
135g milk 牛奶

1. Sieve flour onto sugar in a mixing bowl. Mix well.

2. Pour milk in and mix well with the flour and sugar.

3. Strain the milk mixture using a sieve, and let it drain onto the cooked pandan layer directly.


4. Wrap the bowl with heat resisitant food wrap, and steam over high heat for 25 to 30 minutes, or until an inserted stick came out clean.
For Philips Avance rice cooker, pour another 200ml of water to the pot before heating the cake for the second time for 25 minutes.



5. Allow the cake to cool down before dislodging it. Just pull the edge of the cake from the side of the ware to loosen the cake from it.

6. Cut into bite size and serve. Enjoy :)
